Thanks Sophie. All great suggestions. I would love to hear more about how you make tomato fritters, in particular how you prep the tomatoes...

Yes! It's similar but way simpler. The key is to use grape tomatoes -- not cherry -- which has a lower water content. Diced them small, salt, and squeeze the liquid out very well. Then I keep it simple by just adding herbs and spices, and flour. Similar to the zucchini version here!
