This Monday I flew from my vacation in Spain to Newark and immediately landed in one of the busiest and most draining weeks of the year, all on jetlag, nonetheless. My brain did not like that. My brain did not like that at all, which means I didn’t get to send you the lovely guide to eating in Madrid I meant to yesterday.
However, I wanted to tide you over with something sweet– a simple treat I can’t stop eating spoonfuls of. This is basically a classic icebox cake, but gluten free and dairy free (and vegan) as well if you use Oreo brand gluten-free Oreos. Be warned: This is not gluten free and dairy free because it’s a “healthy” recipe; it’s gluten free and dairy free in the same way I love cherry Coke Zero so much: Because it’s pure chemical (and in that case, fake) sugar high.
This is the best cake ever. It firms up and slices like a very moist chocolate cake filled with Oreo creme. I know, it’s a two-ingredient semi-homemade stack of Oreos in Cool Whip but I swear it’s so, so much more. Or maybe it’s just exactly that, which is why it’s good.
I used gluten free Joe Joe’s by accident because I bought them thinking they were regular, but honestly they feel even more crumbly and more moist than the regular ones. But you might get a softer texture as flour is more absorbent with the gluten-filled kind. I used a tub of Whole Foods brand whipped topping. If you’re fancy you can use whipped heavy cream for a less sweet version. But heavy cream was a whole SEVEN dollars so I opted out.
Gluten free Oreo icebox cake
1 box gluten-free Joe Joe’s (the Trader Joe’s brand Oreos, these contain dairy), or gluten-free Oreos (vegan), or regular Oreos
1 tub non-dairy whipped topping, defrosted (aka Cool-Whip)
In a pretty glass bowl or Pyrex or mason jar spread down a layer of whipped topping. Top with a layer of concentric Oreos. Spread and spackle with whipped topping. Repeat 3x.
You can make as much or as little as you like. Cover with plastic wrap, and refrigerate overnight, till soft.
Enjoy with a spoon.
