One Thing I Ate: New Year’s Caviar & Latkes plate 🥂
Time to impress people with that $17 Wegman's caviar 😏

A few days ago I woke up at 5 am with racing anxiety and could simply not fall back asleep. Instead of spiraling about my demise I decided to fixate on the idea of making a plate of latkes and caviar for New Year’s Eve. I’m not sure where I got this idea but I’m sure it was motivated by the fact that my sister and brother in law made schnitzel latkes which looked mind blowingly good. I dragged my husband* to Wegman’s where I got everything on this board for less than $20.
The result was the fanciest damn latke plate you’d ever seen, perfect for a party. Me? Personally, I wolfed half the plate down with a glass of cider.
*Yes I got married! More on that later.
New Year’s Caviar & Latkes Plate
Serves: 4 appetizer portions
Do you want to make friends and influence people? Impress them with Wegman’s caviar! Personally I loooove salmon roe so I got a tin of that too but you can easily stick to caviar only.
The combo of fried latkes. Sour cream. A little snip of fresh chive and caviar is just … chefs kiss.
Ingredients:
For the latkes:
For the plate:
1 tin black caviar (“Caviar Russe Black Tobiko Roe Caviar”, I got it for $17 at the Wegman’s cheese counter)
1 tin salmon roe (“Caviar Russe Pacific Salmon Roe Caviar”, I got it for $17 at the Wegman’s cheese counter)
1 bundle fresh chives
1 pack mini cucumbers
1 container mixed olives
1 small container sour cream
To create the plate:
Make Melissa Clark’s latkes recipe. I almost never deep fry things and have never made latkes before and I was pleasantly surprised how simple these were to make. It took about 30 minutes with a hand grater, and you could do it in way less if you use a food processor. The key is to squeeze all the liquid out of the potatoes.
To assemble, slice cucumbers thinly and fan out on a pretty plate or wooden chopping board. Pile some olives in the corner. Clean and chop chives.
Top each freshly fried latke with a dollop of sour cream, followed by a small spoonful of caviar or roe, and a sprig of fresh chopped chives.
Enjoy immediately!!!
