I think this is my dream cake. But that doesn’t mean it’ll be your dream cake. Which is why I buried this recipe behind a paywall, aside from the fact that I keep forgetting to charge for anything.
It’s a specific cake, for specific tastes: Children of the 90’s and early naughts whose taste buds developed with that rectangular German rye bread and those “health food” biscotti cookies. People with artsy moms who made a lot of things with leftover soy and veggie pulp. People who love raisins and dates all things dark brown sugar and molasses.
Personally, I love it. I love a loaf that’s thick and dense and moist and molasses-y. I also love carrot cake, in every dimension. And I was sad to miss some at the office this week, which is why I set out to make my own, with the last two limp rainbow carrots in my fridge drawer.
